A few folks asked me for that recipe for the couscous dinner I made last night...



The cookbook is 1000 Vegetarian Recipes From Around The World, and the meal is Moroccan Salad, p699. It's a wonderful book, dictionary-sized, with photos of *every* recipe!

Ingredients:

1 cup couscous
1 1/3 cup boiling water
1 bunch scallions, finely chopped
1 small green bell pepper, seeded and chopped
4 inches (10 cm) piece of cucumber, finely chopped
3/4 cup canned garbanzo beans / chickpeas
1/2 cup raisins or golden raisins
2 oranges (I used 1 grapefruit)
salt and pepper
mixed green lettuce leaves
1 tbs fresh mint leaves, finely chopped
2/3 cup unsweetened yogurt

1. Pour the couscous into a bowl, and pour the 1 1/3 cup of boiling water over the top. Cover and let sit for 15 minutes.

2. Add in the scallions, cucumber, bell peppers, chickpeas and raisins, stirring to combine. Season with salt and pepper.

3. In another bowl, mix the chopped mint leaves and yogurt together, and then mix this into the couscous veggie mixture.

4. Spread lettuce leaves across the serving plate, arrange orange or grapefruit slices around the edges of the plate, and put a mound of couscous veggie mix in the center of each plate, atop the lettuce leaves.
